Famous for centuries (as far back as the 12th century), shortbread can be considered one of Scotland’s great contributions to humankind (sorry golfers, but more people love shortbread than batting around little balls on fields of green). We have uncovered a simple recipe that is easy to put together and delicious to enjoy any time of the year but is also packed with added oomph in the form of a kief-flour base. By using a minimum of ingredients (the shortbread recipe only calls for 4 ingredients, of which a ¼ teaspoon of salt is one ingredient), you can rest assured that the lucky recipients of your kief-y shortbread creation are getting a pure and wholesome dessert using only ingredients easily pronounced, spelled, and remembered.

Kief-y Shortbread

This recipe is versatile, as you can either make a vegan or standard version of shortbread (don’t worry… they both taste fantastic!). Even better, the ingredient list is easily memorized for those wanting to impress others with their culinary knowledge and skills.
Also, keep in mind that the vegan version is super shelf-stable since no dairy products are used in the making of your vegan shortbread. This means you can keep your shortbread in the fridge and it will remain fresh and tasty for several months; the real challenge is exhibiting sufficient self-control to let a batch last that long!

Ingredients

  • 1 cup Kief-Flour (our “Empower Your Flour“ post explains how to make this)
  • 1/4 cup Sugar
  • 1/4 tsp Salt
  • 1/2 cup Butter (Vegan version: we recommend the butter substitute by Earth Balance)

Directions

  1. Preheat the oven to 300°F.
  2. Sift the flour and add it to a mixing bowl. Add the sugar and salt and mix together.
  3. Then add the butter (or vegan substitute butter), rubbing it in with your fingers. It will first be crumbly and then gradually will form into cookie dough. Alternatively, use a pastry cutter to combine the butter and flour into a crumbly mixture.
  4. Line a shallow 8” X 8” cooking pan with parchment paper. (Be sure to have enough parchment paper to cover all the top edges of the cooking pan.)
  5. Pour your crumbly shortbread mixture into the parchment paper-lined cooking pan, pressing flat and evenly across the base of the cookware.
  6. Use a fork to add “dimples” to the top of the shortbread, giving it the classic and traditional shortbread look.
  7. Place in the oven and bake for 45 minutes.
  8. After 45 minutes, remove from the oven and allow the shortbread to cool on a wire rack for around 30 minutes, then place in the refrigerator for a couple of hours.
  9. Remove from the fridge and cut into bars (splitting them into 16 pieces makes for sizable shortbread bars with significant CBD (or Delta 8) cannabinoids added for potential wellness benefits).
  10. The most important step… Enjoy and share with friends!

BONUS RECIPE: Kief-y Lemon Bars

We’re feeling generous this month so we are tossing you yet another recipe that builds off the above shortbread recipe: these Kief-y Lemon Bars use shortbread as its base!

Ingredients

  • 1 cup Kief-Flour (our “Empower Your Flour“ post explains how to make this)
  • 1/4 cup Sugar
  • 1/4 tsp Salt
  • 1/2 cup Butter (Vegan version: we recommend the butter substitute by Earth Balance)
  • 1/2 cup Lemon Juice (about 2 large lemons)
  • 1 cup Organic Sugar
  • 1/2 teaspoon Lemon Extract
  • Pinch of Salt
  • 7 oz. Coconut Cream
  • 1/4 cup Cornstarch
  • Dash of Turmeric
  • Powdered Sugar

Directions

  1. Preheat the oven to 350°F.
  2. Sift the flour and add it to a mixing bowl. Add the sugar and salt and mix together.
  3. Then add the butter (or vegan substitute butter), rubbing it in with your fingers. It will first be crumbly and then gradually will form into cookie dough. Alternatively, use a pastry cutter to combine the butter and flour into a crumbly mixture.
  4. Line a shallow 8” X 8” cooking pan with parchment paper. (Be sure to have enough parchment paper to cover all the top edges of the cooking pan.)
  5. Pour your crumbly shortbread mixture into the parchment paper-lined cooking pan and press flat and even across the base of the cookware.
  6. Place your shortbread mixture into the oven and bake for 20 minutes until the edges are lightly browned. When it’s done, remove it from the oven, leaving the oven on, and let it sit on the countertop while you prepare the lemon filling.
  7. Add the freshly squeezed lemon juice, sugar, lemon extract, salt, coconut cream, cornstarch, and turmeric to a saucepan and whisk as it heats until the ingredients are well combined. Then switch to a wooden spoon and keep stirring. It will suddenly start to thicken dramatically and then you’ll know it’s done.
  8. Pour the lemon filling out over the top of the shortbread crust and smooth down.
  9. Return it to the oven to bake for another 15 minutes at 350°F.
  10. Remove from the oven and place the dish onto a wire cooling rack on the countertop for about an hour to cool down before placing the whole dish into the fridge to chill completely.
  11. Let it chill in the fridge for at least 2 hours until completely chilled before slicing into squares. It’s best if you can leave it overnight to really firm up before slicing.
  12. The final and crucial step to completion… Enjoy and share with others!

We find the tarty sweetness of the lemon filling beautifully offsets the buttery richness of the shortbread base; even so, these are rich treats that, even after dividing into 16 pieces, can be split in half while still enjoying a filling sweet treat!

Key Cooking Notes

We are fanatics of parchment paper and so should you be; seriously, try cooking and cleanly removing shortbread from the bottom of the pan without using parchment paper just once and you will be convinced that parchment paper is the baker’s best friend
You control the amount (and type: CBD and/or Delta 8) of cannabinoids you want to include in your treats (more on that below)
The non-vegan versions of both of these recipes will last for several weeks if kept in the fridge and properly sealed; if you choose the vegan version, boost that freshness time period from weeks to months
We recommend that you add your cannabinoids to the shortbread portion of your Lemon Bar recipe but if you want to boost the lemon filling as well, add cannabinoids to the coconut cream used in the filling recipe

Choose Your Potency!

The beauty of homemade CBD and Delta 8 treats is that you get to decide the amounts of cannabinoids you want to include in each batch.
Here is an example of how to calculate the cannabinoids you plan to add to your recipe…
We recommend a 3 to 1 ratio of flour to kief for your kief-flour mixture which works out to about a ¼ ounce of kief. For this example, let’s grab a ¼ ounce of The Specialist Kief, which contains a solid 19% CBD content.
A quick review reminds us that each gram contains 1000mg; with a ¼ ounce, you have 7 grams, so we are working with a whopping 7000mg.
Now pull out your trusty calculator and let’s do the math: 7000mg X 0.19 (19% converted to decimals) equals 1330mg of CBD.
As we recommended that you cut your shortbread into 16 squares, simply divide your 1330mg by 16 to find out how many mg of CBD each shortbread bar holds. Your answer should be 83.125mg of CBD per shortbread bar being delivered to your endocannabinoid system, a considerable allotment of CBD when compared to edible products you buy online or in stores.
